Hail The Kale Salad
Alright you guys, I have been asked about this Vegan Kale Salad recipe enough times that it needs to be one of the first posts I make. If you follow me on Instagram, you know I share this in my stories ALL. THE. TIME.

You will learn that I’m by no means a chef…I’m more of a “little of this, and a little of that” kind of girl, so hear me right now when I say..these recipes are APPROXIMATES! Please taste as you go and season as you wish!
Now that you’ve been warned, here is my famous “Vegan” Kale Non-Caesar Salad.
Kale Salad | Delicious and Healthy Ingredients
A few handfuls of kale-chopped and dried
1-2 tablespoons of Olive Oil
Fresh Lemon Juice or a drop or 2 of Doterra Lemon Essential Oil (go to my Shop page to find out how to get some of this!)
½ to 1 cup of Nutritional Yeast
Sea Salt
Finely Chopped Garlic
Toasted Cashews, OR Chickpeas, OR Croutons
Capers (if you like)
Put Your Ingredients Together
The key to the deliciousness of this salad is in the massaging. Kale must be massaged like it’s YOUR JOB.
Put the chopped kale in a big bowl with a tablespoon of olive oil and massage it nice and good. Like get your clean hands in there (remember to wear gloves if you are wearing nail polish…don’t want that softening up and flaking off in there!), and then massage for a good five minutes or so. This helps to tenderize and break down the leaves so they are not bitter.
Once the kale is nice and relaxed, (I mean..who isn’t after a massage like that?), you can add more oil if needed and then add about a ½ teaspoon of sea salt and the garlic and then massage again.
Then you add the lemon juice or lemon oil and massage again. This would be a good time to taste it and see what needs to be added.
Then add the nutritional yeast, and..yup, you guessed it…massage AGAIN. And then finally, you top it off with your garnish of choice, I love cashews personally!
Toss in the capers, and VOILA…you have a delicious, hearty “Vegan” kale salad with all the green goodness of the kale, the immune boosting benefits of the garlic, the vitamin B from the yeast, etc.
Well That Was Easy!
Way healthier than a traditional Caesar while still having that cheesy tangy flavor we all love. If I could only eat one food for the rest of my life…this would be it.
