Apparently this is turning into a food blog! Not my intention but I guess I AM a nutritionist. #amiright? And since I believe anti-aging and glowing skin starts with food, I guess it makes sense! You guys have been asking for all my recipes for the things you watch me make over on Instagram, so when you ask, I like to deliver!

You guys, this soup is seriously so easy, I don’t know that it could get ANY easier. It is a decadent, creamy alternative to dairy laden soups, and with a few twists, you could use this as a base for sauce and dressing also.

What I love, is that it contains cauliflower which is a cruciferous vegetable. Cruciferous veggies help our bodies eliminate excess estrogen and can be balancing for our hormones, so eat up!

What you’ll need:

 

One Head of cauliflower

One can of Coconut Milk

2-3 cups of stock, or some bouillon cubes for flavor. You can also skip the fancy flavoring and stick to good old salt and pepper and just use water as the liquid.

A few cloves of garlic

Once small white onion

Make It!

 

Chop up the the garlic and onion, saute in a little bit of coconut or olive oil, and then add chopped cauliflower. It doesn’t have to be perfect, it’s all getting blended anyway!

You want to sautee for a few more minutes and then add the liquids to barely cover everything. So add the coconut milk, stock/water and seasoning, and then simmer.

Once the cauliflower has softened (about ten minutes), take the pot to the blender (I love the vitamix!) and puree.

Once it’s all yummy and creamy, take it back to the pot and season to taste.

Yup, that’s it!

It is so rich and velvety you’ll feel like you’re doing something bad. But you’re not. I love to pair this soup with my yummy kale salad.
